BREAKFAST POTATOES

HAPPY NEW YEAR FOLKS!

I’m definitely excited for 2021. So much happened in 2020, but here we are stronger than ever, with more fire and enthusiasm to chase our dreams and goals and I hope the same applies to you.

I wanted to start off the year by sharing this amazing dish, Breakfast potatoes. This recipe is 100% fail proof trust me. All you need is potatoes, paprika, salt, black pepper and oil and voila, you’ll have a dish in no time.

We’ll start off by peeling the potatoes then cutting them into cubes.

The secret to perfect and crispy potatoes is BLUNCHING. You’re probably wondering what that is. You’re sis gatchu. Blunching is deep frying twice. You first deep fry to get the inside cooked, then the 2nd deep frying is to get the outside coating crispy. Try this hack and I promise you, potatoes will never be the same again.

once the oil is heated, add the potatoes in one by one and avoid overcrowding as it reduce the temperature of the oil, hence more cook time and the potatoes end up soaking excessive oil.

For the second fry, ensure the oil is extra hot. cook for about 2 minutes and remove once golden brown.

While still hot, coat the potatoes with the spices , toss and voila, serve your potatoes with either toast, eggs and sausages for brunch , or chicken or stew for dinner and lunch.
